ผัดไทย · Phat thai
Thailand's most famous dish: stir-fried rice noodles, tamarind, palm sugar and roasted peanuts.
Pad thai is the smell of Bangkok after dark, when woks fire up on every street corner. It's all about balance: the sourness of tamarind, the caramel sweetness of palm sugar and the crunch of roasted peanuts.
Everything you can't find at the supermarket is in the box. You just pick up the noodles, eggs and prawns: the shopping list is on the recipe card.
The recipe at a glance
Soak the noodles in warm water for 20 minutes.
Stir the tamarind and palm sugar into the fish sauce: that's your pad thai sauce.
Sear the prawns in a hot wok, push them to one side and scramble the eggs.
Add the noodles, the sauce and the preserved radish. Let everything caramelise.
Finish with bean sprouts, spring onion, peanuts and a squeeze of lime.
Exact quantities and the step-by-step video are in the box.
